Sucralose là gì ?

Sucralose là một loại đường khử có công thức hóa học là C12H19Cl3O8, danh pháp quốc tế 1,6-Dichloro-1 ,6-dideoxy-β-D-fructofuranosyl-4-chloro-4-deoxy-α-D-galactopyranoside tên gọi khác là 1’,4,6’- trichlorogalactosucrose, trichlorosucrose.

Sucralose được sản xuất từ sucrose bằng cách khử clo trong môi trường nhiệt độ cao, pH thấp để thay thế ba nguyên tử clo cho ba nhóm hydroxyl. Năm 1980, Tate & Lyle Ltd. đã bắt tay với tập đoàn Johnson & Johnson – một tập đoàn lớn về dinh dưỡng và chăm sóc sức khỏe, thành lập ra công ty McNeil để thương mại hóa sucralose. McNeil đã thực hiện trộn sucralose với maltodexin và dextrose (hai loại đường này đều được sản xuất từ ngô) để tạo ra một loại đường thay thế nhãn hiệu khá nổi tiếng Splenda. Ngoài ra, sucralose còn xuất hiện với những cái tên thương mại khác như: Sukrana, SucraPlus , Candys, Cukren và Nevella.
